This is difficult because I enjoy good cooking and good food. However, I am very picky about what I will eat. For example, I will not eat any pies made with fruit, but I love lemon meringue pies, pecan pies, and chocolate cream pies when cooked properly.
I love pancakes, but not if you are going to put fruit or any of the many gunky things in or on them that is advertised everywhere.
I love a good hamburger with all the trimmings. As long as those trimmings are a regular hamburger bun with the hamburger meat cooked done, onions, lettuce, tomatoes, pickles, and mustard. Nothing more and nothing less.
I grew up around Hispanics and came to love their food. However, in my day, the food was authentic. It was cooked by individuals who made it fresh and the taste could not be compared to anything today. It was mouthwatering good.
I love Chinese food. It is one of my favorites and my adopted daughter, who is Chinese, every year for my birthday, takes me to a Chinese restaurant and treats me to great Chinese food.
I love things like chitterlings, kidneys, cat fish, greens, and black-eyed peas to name a few. But my favorite food usually surprises people when they find out.
When I started junior high school, one of my classes was home economics. The teacher taught us many things about taking care of a home and learning to cook some dishes we may not have been familiar with.
It was in this class I learned how to cook my favorite dish from scratch. It took hours to simmer and we could not have the fruit of our labors until the next day when we returned to class, but it was worth the wait.
I know you are wondering what is this mysterious dish that I love so much. Well, if you haven’t guessed by now, it’s spaghetti.
My mother used to prepare spaghetti for us in the only manner she knew. She would put the tomato sauce from a can into a pot. Add some water and when it started to bubble, she would add the spaghetti. It was clumpy and for me it tasted terrible. In fact, I didn’t think it had a taste.
So imagine my surprise when I took this class and we prepared the sauce from scratch and let it simmer for hours. The spaghetti was prepared separately. It was rinsed and drained in a strainer, then place in another bowl and stirred with a little oil to keep it from sticking together.
When we prepared our plates, we put the sauce on top of the spaghetti. We never cooked the two together. I could not believe the taste. It was great! I had never tasted anything like it.
I told my mother, but she said she didn’t know how to cook it like that and had too many kids to take care of to be doing all of that work to prepare one meal and then having to wait hours before she could serve it to us.
When I became an adult and had my own money, one of the first things I did was to try to re-create what we had cooked in school. I didn’t do so well, but it was far better than what my mother had prepared for us all those years and my mother loved my spaghetti.
Later I found spaghetti sauce in a jar and tried it. It was ok. However, the next time I used the sauce, I doctored it up by adding fresh onions, bell peppers, mushrooms’, hamburger meat, oregano, sage, salt and pepper and I let it simmer for about an hour. That improved the taste of the sauce greatly.
Today, spaghetti is still my favorite dish when it is cooked right. I’m not always pleased when I go to restaurants. The spaghetti is usually too soft for me.
So now you know my favorite food is spaghetti. There is no meaningful lesson I learned that would impact my life, but boy, do I love spaghetti.
